Cranberry Mousse Cups

A simple, elegant layered dessert with creamy white chocolate mousse and sweet-tart cranberry mousse. Perfect for the holidays and beautiful when garnished with sugared cranberries.

Ingredients

Fresh or frozen cranberries

Granulated sugar

Water

Heavy cream

White chocolate

Vanilla extract

Gelatin powder

Cold water

Optional garnish: sugared cranberries, mint leaves

Instructions

  1. Make cranberry mixture:
    Add cranberries, sugar, and water to a pot. Cook over medium heat until the berries burst and the mixture thickens.
  2. Purée (optional):
    Strain the mixture for a smoother mousse, if desired. Let it cool completely.
  3. Prepare white chocolate mousse:

Melt the white chocolate in a microwave-safe bowl and let it cool to lukewarm.

Whip the heavy cream to soft peaks.

Stir vanilla into the cooled white chocolate.

Fold in part of the whipped cream to make a light mousse.

  1. Prepare cranberry mousse:

Bloom gelatin in cold water, then melt it gently.

Stir the melted gelatin into the cranberry purée.

Fold the remaining whipped cream into the cranberry mixture.

  1. Assemble:

Spoon or pipe the white chocolate mousse into the bottom of each serving cup.

Add a layer of cranberry mousse on top.

  1. Chill:
    Refrigerate the cups for at least 2 hours, or until fully set.
  2. Serve:
    Garnish with sugared cranberries or mint leaves.
