Ingredients
1 cup cottage cheese (low-fat or regular)
2–3 tbsp unsweetened cocoa powder
2–3 tbsp low-carb sweetener (erythritol, monk fruit, etc.)
1 tsp vanilla extract
Pinch of salt
Optional: sugar-free chocolate chips or chopped nuts for topping
Instructions
Blend: Add cottage cheese, cocoa powder, sweetener, vanilla, and salt to a blender or food processor. Blend until smooth, thick, and creamy.
Adjust: Taste and add more sweetener or cocoa if needed.
Chill: Spoon into cups or bowls and refrigerate for at least 30 minutes to set.
Serve: Add sugar-free chocolate chips or nuts on top if you like. Enjoy your rich, guilt-free mousse!
