
Ingredients
Flour – 2 cups (250g)
Sugar – 1 cup (200g)
Vegetable oil – ½ cup (120ml)
Eggs – 2 large
Fresh strawberries (chopped) – 1½ cups (about 220g)
Milk – ½ cup (120ml)
Baking powder – 2 teaspoons
Salt – ¼ teaspoon
Vanilla – 1 tablespoon
Strawberry jam – 2 tablespoons (optional but enhances strawberry flavor)
A little extra flour for coating strawberries
Instructions
The strawberries are washed, dried, and chopped into small pieces, then tossed lightly in a tablespoon of flour so they don’t sink in the batter.
The eggs, sugar, and oil are whisked together until smooth.
Milk, vanilla, and strawberry jam are mixed in until combined.
The flour, baking powder, and salt are sifted together, then folded gently into the wet mixture.
The floured strawberries are folded into the batter without overmixing.
The batter is poured into a greased loaf pan and smoothed on top.
It is baked in a preheated oven at 170°C for 50–55 minutes until golden and a toothpick inserted comes out clean.
The bread is cooled for 10 minutes in the pan, then removed and allowed to cool completely before slicing.
