Instructions
Prep the Veggies:
Chop any vegetables you’d like to use. Spread them out on a sheet pan and drizzle with oil. Season generously with salt, pepper, onion powder, garlic powder, parsley, thyme, oregano, and red pepper flakes—or your preferred seasonings.
Roast the Veggies:
Bake at 350°F until the vegetables start to soften. Most veggies like peppers and onions take about 10 minutes, but check by piercing them with a fork.
Add the Shrimp:
Once the veggies are nearly done, add the raw shrimp to the sheet pan. Return to the oven for 4–5 minutes, or until the shrimp turn pink and opaque.
Cook the Kielbasa:
While the shrimp and veggies finish cooking, pan-fry the spicy kielbasa until browned.
Combine & Serve:
Toss everything together and enjoy a hearty, savory meal!
