Festive Roasted Beet and Caramelized Pear Salad with Feta & Pistachios

This holiday-inspired salad is a perfect balance of sweetness, creaminess, and crunch. Tender roasted beets pair beautifully with golden caramelized pears, salty feta, and nutty pistachios—creating a dish that feels elegant yet comforting. Ingredients:

4 medium roasted beets, peeled and sliced

2 ripe pears, thinly sliced

1 tbsp butter

1 tbsp honey or maple syrup (for caramelizing)

1/2 cup crumbled feta cheese

1/4 cup chopped pistachios

2 cups mixed greens (arugula, spinach, or spring mix)

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp Dijon mustard

Salt & black pepper to taste

Instructions:

Step 1 — Caramelize the Pears

  1. Melt butter in a pan over medium heat.
  2. Add pear slices and cook 2–3 minutes on each side.
  3. Drizzle honey (or maple syrup) and let them turn golden and caramelized.
  4. Remove from heat and cool slightly.

Step 2 — Assemble the Salad

  1. Place mixed greens on a serving platter or bowl.
  2. Add sliced roasted beets evenly over the greens.
  3. Arrange the caramelized pears on top.
  4. Sprinkle crumbled feta cheese and chopped pistachios generously.

Step 3 — Make the Dressing

  1. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
