
Ingredients
Meatballs
1.5 lbs ground beef
2 Tbsp fresh parsley, chopped
3/4 cup grated Parmesan
1/2 cup almond flour
2 eggs
1 tsp kosher salt
1/4 tsp black pepper
1/4 tsp garlic powder
1 tsp dried onion flakes
1/4 tsp dried oregano
1/2 cup warm water
Parmigiana
1 cup sugar-free marinara
4 oz mozzarella cheese
Instructions
For the Meatballs:
Combine all the meatball ingredients in a large bowl and mix well.
Form into about fifteen 2″ meatballs.
Cook one of two ways:
Bake: 350°F for 20 minutes
Fry: In a skillet over medium heat until fully cooked
Pro tip: Fry them in bacon grease for an extra punch of flavor!
Frying gives you the beautiful golden-brown crust like in the picture.
For the Parmigiana:
Place the cooked meatballs in an oven-safe dish.
Spoon about 1 tablespoon of marinara over each one.
Top each meatball with roughly 1/4 oz of mozzarella.
Bake at 350°F for 20 minutes (or 40 minutes if the meatballs were frozen) until heated through and the cheese is melted and golden.
Garnish with fresh parsley if you’d like.
