Creamy Avocado Cilantro Pasta

Ingredients:

12 oz (340 g) pasta of choice (spaghetti, linguine, or penne)
1 ripe avocado
1 cup fresh cilantro leaves
2 garlic cloves
Juice of 1 lime (or lemon)
1/4 cup olive oil
1/4 cup grated Parmesan cheese
1/4 cup water (or more, to thin sauce)
Salt and freshly ground black pepper, to taste đź§‚l
Optional toppings: cherry tomatoes, red pepper flakes, or extra cheese

Instructions:

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain.

Make the Sauce:
In a blender or food processor, combine avocado, cilantro, garlic, lime juice, olive oil, Parmesan cheese, and water. Blend until smooth and creamy. Add more water if needed for desired consistency.

Combine:
Return the drained pasta to the pot (off the heat). Pour the avocado sauce over the pasta and toss to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.

Serve and Garnish:
Season with salt and pepper, then serve immediately. Garnish with cherry tomatoes, red pepper flakes, and extra Parmesan, if desired.

Tips:

Serve the sauce fresh — avocado oxidizes quickly, so it’s best enjoyed right after blending.
For a vegan version, omit Parmesan or use nutritional yeast.
Try adding grilled shrimp or chicken for a heartier meal.
