Ingredients (Makes 10–12 biscuits)
Dry Ingredients
- 1 ½ cups blanched almond flour
- 1 tbsp baking powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt
Wet Ingredients
- 2 large eggs
- 3 tbsp melted butter
- ½ cup sour cream or Greek yogurt
Mix-ins
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 4 slices cooked bacon, crumbled
- Optional: 1 tbsp chopped parsley or chives
Topping
- 2 tbsp melted butter
- ½ tsp garlic powder
- 1 tbsp shredded cheddar for sprinkling
Instructions
1. Preheat & Prepare
Preheat your oven to 375°F (190°C).
Grease or line a round baking dish or cast-iron skillet for that rustic, golden finish.
2. Mix the Dough
In a large mixing bowl, whisk together almond flour, baking powder, garlic powder, onion powder, and salt.
Add eggs, melted butter, and sour cream (or Greek yogurt). Stir until well combined — the dough should be thick but soft.
Fold in shredded cheddar, grated Parmesan, and crumbled bacon until evenly distributed.
3. Shape & Arrange
Scoop about 2 tablespoons of dough for each biscuit and shape them into small balls.
Place them close together in the baking dish — letting them slightly touch creates that perfect “pull-apart” look.
Brush the tops with melted butter and sprinkle extra shredded cheddar on top.
4. Bake
Bake for 18–22 minutes, or until the biscuits are golden brown and firm on the surface.
Optional: Brush again with a butter-garlic glaze right after baking for a glossy finish and extra flavor.
5. Garnish & Serve
Sprinkle with fresh parsley or chives before serving.
Enjoy warm — they’re perfect as:
- A savory breakfast with eggs
- A side dish with soups or stews
- A snack with keto ranch or garlic dip
