How to prepare Spicy Garlic Chicken with Roasted Veggies & Fresh Cucumber Tomato Salad

A colorful, flavor-packed dish featuring juicy spicy-garlic chicken, tender roasted potatoes and carrots, crisp red peppers, and a refreshing cucumber–tomato salad. Perfect for a satisfying, balanced, and wholesome meal!

Ingredients
For the Spicy Garlic Chicken

2 chicken breasts

1 tbsp olive oil

1 tsp paprika

½ tsp chili powder

1 tsp garlic (minced)

½ tsp dried thyme or oregano

Salt & pepper, to taste

1 tsp lemon juice

For the Roasted Veggies

1 potato, sliced

1 carrot, sliced

½ red bell pepper, sliced

1 tbsp olive oil

Salt & pepper, to taste

½ tsp dried herbs (optional)

For the Fresh Salad

½ cucumber, diced

1–2 tomatoes, diced

¼ onion, chopped

⅓ cup sliced red pepper

Pinch of dried herbs (optional)

1 tsp lemon juice

Salt & pepper to taste

Directions

Marinate the chicken:
Mix olive oil, paprika, chili powder, garlic, herbs, salt, pepper, and lemon juice.
Coat the chicken and let rest for 10 minutes.

Cook the chicken:
Heat a pan over medium heat and cook chicken for 4–5 minutes per side until golden and cooked through.

Roast the vegetables:
Toss potatoes, carrots, and red pepper with olive oil, salt, pepper, and herbs.
Bake at 200°C (390°F) for 20–25 minutes or until tender and lightly browned.

Prepare the salad:
Combine cucumber, tomato, onion, and red pepper in a bowl.
Season with lemon juice, salt, pepper, and herbs.

Assemble the plate:
Place chicken on one side, roasted veggies on the other, and finish with the fresh salad.
