Brigadeiro Chocolate Dream Cake

If you’re a true chocolate lover… this cake is dangerously delicious. Moist, rich, and smothered in glossy brigadeiro frosting — with little chocolate truffle bites decorating the edges — every slice melts right in your mouth. It’s the ultimate indulgence for birthdays, celebrations, or anytime you crave something unforgettable.

Ingredients

For the Chocolate Cake

2 cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

2 tsp baking powder

1 ½ tsp baking soda

½ tsp salt

3 large eggs

1 cup whole milk

½ cup vegetable oil

1 cup hot water (or hot coffee for richer flavor)

2 tsp vanilla extract

For Brigadeiro Frosting

2 cans (395 g each) sweetened condensed milk

1 ½ cups heavy cream (or 2 boxes of Brazilian cream — “creme de leite”)

4 tbsp unsweetened cocoa powder

2 tbsp butter

1 tsp vanilla extract

For Brigadeiro Truffle Decoration (optional but amazing)

1 can sweetened condensed milk

2 tbsp cocoa powder

1 tbsp butter

👩‍🍳 Preparation

1️⃣ Make the Chocolate Cake

  1. Preheat oven to 350°F (180°C).
  2. Grease and line two 8-inch (20 cm) round cake pans.
  3. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, sugar, and salt.
  4. Add eggs, milk, oil, and vanilla; mix until smooth.
  5. Pour in hot water (or coffee) slowly and mix — the batter will be thin.
  6. Divide batter into pans and bake 30–35 minutes, or until a toothpick comes out clean.
  7. Let cakes cool completely before frosting.

2️⃣ Make the Brigadeiro Frosting

  1. In a saucepan, add condensed milk, heavy cream, cocoa powder, and butter.
  2. Cook over medium heat, stirring constantly, until thick and glossy (about 12–15 minutes).
  3. Remove from heat and add vanilla extract.
  4. Allow to cool slightly — it should be spreadable but not runny.

3️⃣ Make the Brigadeiro Truffles (optional decoration)

  1. In a small pot, combine condensed milk, cocoa powder, and butter.
  2. Cook over medium heat until it forms a thick dough that pulls away from the pan.
  3. Cool completely, then roll into small balls and coat with chocolate sprinkles.

4️⃣ Assemble the Cake

  1. Place the first cake layer on a serving plate and spread a generous amount of brigadeiro frosting.
  2. Add the second layer and cover the entire cake with frosting.
  3. Decorate the top with brigadeiro truffles around the edges.
  4. Chill for 30 minutes for clean slicing — then serve and enjoy! Tips

Hot coffee instead of water makes the chocolate flavor deeper.

For an extra indulgent version, drizzle chocolate sauce over the top before adding truffles.

This cake tastes even better the next day refrigerated.
