Ingredients
Peanut Butter Filling
4 oz cream cheese, softened
1/4 cup butter, softened
1/2 cup creamy natural peanut butter
1/2 tsp vanilla extract
3/4 cup powdered Swerve
Chocolate Coating
1/2 cup Lily’s semisweet chocolate chips
1 tsp coconut oil
Instructions
Make the Peanut Butter Balls
In a mixing bowl, beat together the softened cream cheese, butter, peanut butter, vanilla, and powdered Swerve until smooth.
Roll the mixture into 1-inch balls.
Place the balls in the freezer to firm up.
Make the Chocolate Coating
Add Lily’s chocolate chips and coconut oil to a microwave-safe bowl.
Microwave in 15-second intervals, stirring between each, until fully melted. (Do not overheat.)
Dip & Finish
Dip each chilled peanut butter ball into the chocolate, leaving a little of the top exposed to create the classic “buckeye” look.
Allow the chocolate to set, then store in the fridge or freezer.
