Ingredients
For the Cake:
2 whole oranges
3 large eggs
⅔ cup honey
2 cups almond flour
½ cup ground pistachios
1 tsp baking powder
1 tsp vanilla extract
¼ cup chopped pistachios (for topping – optional)
Instructions
- Prepare the oranges:
Place the whole oranges (unpeeled) in a pot of boiling water and cook for 50–60 minutes until soft. Drain and let cool completely. - Blend:
Cut the oranges into large chunks, remove any seeds, then place them in a blender or food processor and puree until smooth. - Mix the batter:
In a mixing bowl, whisk the eggs, honey, and vanilla. Add almond flour, ground pistachios, and baking powder. Mix until well combined. Fold in the orange puree. - Bake:
Pour batter into a greased 8- or 9-inch round cake pan lined with parchment paper. Bake at 170°C (340°F) for 45–55 minutes, or until golden and a toothpick comes out clean. - Cool & Serve:
Let the cake cool fully before slicing. Top with chopped pistachios if desired.
