Ingredients (1 serving)
For the Strawberry Mousse Layer:
1 cup heavy cream — whipped until thick and fluffy
1 tbsp sugar-free strawberry syrup or mashed fresh strawberries
1 tbsp cream cheese (optional, for extra richness)
Stevia or monk fruit, to taste
For the Cheesecake Filling:
1 cup plain fat-free Greek yogurt
2 tbsp Cool Whip
1 tbsp sugar-free cheesecake instant pudding mix
For the Toppings / Layers:
1/8 cup light cherry pie filling
2 tbsp Keebler graham cracker crumbs
Instructions
- Make the Strawberry Mousse
In a bowl, whip the heavy cream until thick and fluffy.
Gently fold in the sugar-free strawberry syrup (or mashed strawberries), cream cheese, and sweetener of your choice.
Chill in the refrigerator for at least 30 minutes for the mousse to set — longer is even better.
- Prepare the Cheesecake Filling
In another bowl, mix together the Greek yogurt, Cool Whip, and sugar-free cheesecake pudding mix until smooth and creamy.
- Assemble the Jar
Add 1 tbsp of graham cracker crumbs to the bottom of a jar.
Spoon a layer of cheesecake filling over it.
Add a layer of strawberry mousse.
Add a spoon of cherry pie filling.
Repeat layers if desired.
Finish with the remaining graham crumbs on top.
- Chill & Serve
Serve immediately or refrigerate for 1–2 hours for the layers to firm and the flavors to meld.
Tips
You can swap strawberries with blueberries, raspberries, or peaches.
Use sugar-free pie filling to reduce points even more.
