Instructions
Preheat Oven
Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare Zucchini Base
Slice the zucchinis into even rounds (¼-inch thick).
Place them on the baking sheet and brush both sides with olive oil.
Sprinkle with salt and pepper.
Pre-bake the Zucchini
Bake for 5–7 minutes, until slightly softened.
Remove from oven and gently blot any excess moisture with paper towels.
Assemble the Pizza Bites
Spread a small spoonful of pizza sauce over each zucchini slice.
Add a pinch of mozzarella cheese and your favorite toppings.
Finish with a bit more cheese on top if desired.
Bake Again
Return to the oven and bake for 8–10 minutes, or until cheese is melted and bubbly.
For extra crispness, broil for an additional 1–2 minutes.
