
Ingredients
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1 ripe mango, peeled and cut into 1-inch cubes
1–2 habanero peppers, finely minced (adjust to taste)
2 tbsp olive oil
2 garlic cloves, minced
2 tbsp lime juice
Salt and black pepper, to taste
Skewers (soaked in water if wooden)
Optional garnish: chopped cilantro, lime wedges
Instructions
Marinate the chicken:
In a bowl, combine olive oil, garlic, lime juice, minced habanero, salt, and pepper. Add chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes.
Prepare the skewers:
Thread chicken cubes and mango chunks alternately onto the skewers.
Preheat the grill:
Heat your grill to medium-high heat.
Grill the skewers:
Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until chicken is fully cooked (internal temperature 165°F / 74°C) and slightly charred.
Serve:
Transfer skewers to a serving platter. Garnish with chopped cilantro and lime wedges. Serve immediately with rice, salad, or grilled vegetables.
