
Ingredients
For the Crust:
2 cups shredded mozzarella cheese
2 oz cream cheese
¾ cup almond flour
1 tsp baking powder
1 egg
½ tsp garlic powder
½ tsp Italian seasoning
For the Toppings:
½ cup sugar-free pizza sauce
1 ½ cups shredded mozzarella cheese
20–25 slices pepperoni
¼ cup sliced black olives
Instructions
Preheat oven:
Heat to 400°F (200°C) and line a baking pan with parchment paper.
Make the crust:
In a microwave-safe bowl, combine mozzarella and cream cheese.
Microwave for 1 minute, stir, then another 30 seconds until melted smooth.
Add almond flour, baking powder, egg, garlic powder, and Italian seasoning.
Mix until a dough forms (use your hands if needed).
Form the base:
Place the dough between two pieces of parchment paper.
Roll into a rectangle about ¼ inch thick.
Transfer to the baking pan and remove the top parchment.
Prebake:
Bake crust for 8–10 minutes, until lightly golden.
Add toppings:
Spread the pizza sauce evenly.
Add shredded mozzarella, pepperoni, and sliced olives.
Bake again:
Return to the oven for 8–10 minutes, until cheese is melted and bubbly.
Slice and enjoy:
Let cool for a few minutes before slicing. Serve hot.
Tips
Swap almond flour for coconut flour (use ¼ cup) if preferred.
Add mushrooms, green peppers, or cooked sausage for extra toppings.
Store leftovers in the fridge up to 3 days — reheat in oven or air fryer for best texture.
