
Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt & black pepper, to taste
For the Bruschetta Topping:
2 cups cherry tomatoes, diced
¼ cup fresh basil, chopped
2 cloves garlic, minced
1 tbsp balsamic vinegar
1 tbsp olive oil
Salt & pepper, to taste
Optional Garnish:
Shredded Parmesan
Balsamic glaze
Instructions
Step 1: Prepare the Chicken
Preheat grill to medium-high heat.
Brush chicken with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
Step 2: Grill the Chicken
Grill chicken breasts 6–7 minutes per side, until internal temperature reaches 165°F (74°C).
Remove from grill and let rest for 5 minutes.
Step 3: Make the Bruschetta Topping
In a bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper.
Let sit for 5–10 minutes to marinate.
Step 4: Assemble & Serve
Place grilled chicken on a plate and spoon the fresh tomato basil bruschetta over the top.
Optional: sprinkle with Parmesan or drizzle with balsamic glaze.
