Instructions

Mix it up:
In a bowl, combine the softened cream cheese, shredded coconut, sugar-free Jell-O powder, erythritol, and vanilla extract.
Stir until everything is fully blended and forms a thick dough-like mixture.

Shape:
Use a small cookie scoop or spoon to form bite-sized balls.
Place them on a parchment-lined baking sheet.

Chill or freeze:
