Ingredients
½ lb bulk Italian sausage (hot or mild)
¼ cup low-carb marinara sauce (like Rao’s)
½ cup shredded mozzarella cheese (about 2 oz)
½ oz sliced pepperoni
⅛ medium green bell pepper, thinly sliced
2 tbsp sliced black olives
2 small mushrooms, thinly sliced
Instructions
Cook the sausage:
In a medium skillet over medium heat, cook the sausage until browned and fully cooked, breaking it up with a spoon as it cooks (about 8 minutes). If using sausage links, remove the casings first. Transfer to a paper towel–lined plate to drain excess grease.
Assemble the pizza base:
Spread the cooked sausage evenly in a small casserole dish or divide it between two 8-ounce ramekins.
Add the toppings:
Spoon the marinara sauce over the sausage. Layer on the mozzarella, pepperoni, green pepper, mushrooms, and olives. Sprinkle a little extra cheese on top to help the toppings stay in place.
Bake:
Bake at 375°F (190°C) for 10–15 minutes, or until the cheese is melted and bubbly.
