
Ingredients:
For the crust:
1½ cups shredded mozzarella cheese
2 tbsp cream cheese
¾ cup almond flour
1 egg
½ tsp baking powder
Pinch of salt
For the topping:
½ cup cream cheese or ricotta
4–5 slices smoked salmon
2 tbsp capers
¼ small red onion, thinly sliced
2–3 sun-dried tomatoes, chopped
½ tsp dried dill or Italian seasoning
Black pepper to taste
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a microwave-safe bowl, melt mozzarella and cream cheese together for about 45 seconds. Stir until smooth.
Add almond flour, baking powder, salt, and egg. Mix until a dough forms.
Roll or press the dough into a flatbread shape on the parchment paper.
Bake for 10–12 minutes, or until golden brown. Remove and let cool slightly.
Spread a layer of cream cheese or ricotta evenly over the crust.
Add smoked salmon, red onion slices, capers, and sun-dried tomatoes on top.
Sprinkle with dill and black pepper before serving.
Optional:
Drizzle a little olive oil or lemon juice over the top for extra flavor.
Add fresh arugula for a fresh touch.
